Brown Butter Sage Sauce over Rigatoni






Our son was coming home for the weekend and when we asked him what would taste good for dinner his first response was Brown Butter Ravioli.  We planned on making some of Ina Garten's Steakhouse steaks and I thought I would make the brown butter, but add  sage and then serve it over Mezza Rigatoni. This does taste delicious over ravioli, but I was looking for  lighter pasta 

1/2 cup (1 stick) unsalted butter
6 fresh sage leaves (torn into pieces or 1/4 cup fresh basil)
1/2 tsp salt
1/4 tsp freshly ground pepper
pinch of freshly grated nutmeg
1/3 cup of Parmesan Cheese


In a large, heavy frying pan, melt the butter over medium-high heat until pale golden, about 4 minutes.  

Add the sage or basil and cook until crisp, about 2 minutes. Stir in 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and the nutmeg. Season the sauce with more salt and pepper to taste. Sprinkle with the Parmesan cheese and serve.
