Creamy Taco Soup


Souper Sunday is still going strong, even in this hot weather.  This was so good and super easy to make. We topped it off with some cilantro and some tortilla chips.  


1 lb. Ground Beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can diced tomatoes, 14.5 oz
1 can diced tomatoes with green chilies
3 cups beef broth
4 oz cream cheese, softened
1 cup heavy cream or half and half 
1 1/2 cups shredded cheddar cheese
salt and pepper to taste

Brown the ground beef and onion in a large pot over medium heat. Drain excess fat.

Add garlic and taco seasoning; cook for 1 minute.

Stir in tomatoes and broth. Bring to a simmer for 10-15 minutes.

Lower heat and whisk cream cheese until melted.

Add heavy cream and shredded cheese, stirring until smooth.

Simmer for another 5 minutes. Season with salt and pepper. 

Serve hot, topped with cilantro, tomatoes and extra cheese.
