Pecan Bars
I can't believe I never posted these. These were favorites of my mom that we would make every Christmas. The other day our son asked if we could make them for this past weekend because he was coming home for a football game and tailgating. I happily obliged knowing how much I loved these. Sorry for the small pictures, but they were just too good not to eat and I forgot to get a good picture until they were almost gone.
2 cups all-purpose flour
2/3 cup powdered sugar
3/4 cup butter, softened
1/2 cup firmly packed brown sugar
1/2 cup honey
2/3 cup butter
3 Tbsp. whipping cream
3 1/2 cups coarsely chopped pecans
Directions
Prepare oven and baking dish: Preheat oven to 350°F. Lightly grease a 13- x 9-inch baking dish with cooking spray.
Make crust: Sift together 2 cups flour and 2/3 cup powdered sugar. Cut in 3/4 cup softened butter using a pastry blender or fork just until mixture resembles coarse meal.
Press crust mixture into baking dish: Pat mixture on bottom and 1 1/2 inches up sides of a lightly greased 13- x 9-inch baking dish.
Bake crust: Bake at 350°F for 20 minutes or until edges are lightly browned. Cool.
Make filling: Bring brown sugar, honey, 2/3 cup butter, and whipping cream to a boil in a saucepan over medium-high heat. Stir in pecans.
Add filling to crust: Pour hot filling into prepared crust.
Bake pecan pie bars: Bake at 350°F for 25 to 30 minutes or until golden and bubbly. Cool completely before cutting into 2-inch squares.
