Cajun Sausage and Tortellini


This one pan meal packs a bit of heat.  We had made this a few weeks ago and hubby said "Ian would love this one".  So when he was home last week we made this for him and his girlfriend.  (She asked for the recipe.) This did make plenty, even for 4 people.  

We used Hillshire Farms Smoked Sausage and yes, we did use the Wegmans Cheese sauce mis.  It comes in packets now in a box, not the long box you would buy years ago.  This is pretty much pantry ready, except for the cheese sauce. 



28 oz Package of Cheese Tortellini
28 oz Smoked Sausage, Sliced
3 tbsp Butter
1 tbsp Flour
3/4 cup Heavy Cream
12 oz Velveeta Cheese Sauce
1 Can of Rotel Tomatoes with Green Chiles


Seasonings
1 tbsp Cajun Seasonings
1 tsp Old Bay
1/2 tsp Salt
1 tsp Pepper
1/2 tsp Garlic Powder
1/2 tsp Onion Powder

 Boil tortellini according to the instructions. Once it's cooked, drain and set aside.

Slice sausage and place it in a skillet. Brown it well then remove from the pan.

In the same pan, melt butter on medium heat. Add in flour and stir until a paste forms. Add heavy cream and stir until roux is mixed together into the heavy cream.

Reduce heat to low, add in the can of Rotel tomatoes then stir in the cheese sauce. Add seasonings to sauce and stir well, still on low.

Fold in the browned sausage and then tortellini until it's fully mixed with the cheese sauce. Serve and enjoy!
