Apple Pie Coffee Cake

So good I couldn't wait to try!

 I wanted something sweet yesterday.  And being fall and apple time this recipe fit the bill.  Tons of flavor with the spices involved and the maple glaze. 


Ingredients




Apple Filling
  • 1 large apple (or 2 medium apples), diced in small pieces*
  • 2 Tbsp butter, unsalted
  • 2 Tbsp brown sugar
  • 2 Tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • pinch of salt
  • 1 Tbsp cornstarch
  • 1 Tbsp water
Cake Batter
  • 1 box white cake mix (yellow or spice cake will work as well)
  • 1 cup sour cream
  • 3 eggs, large
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/3 cup water
Maple Icing
  • 2 Tbsp butter, unsalted
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
Instructions
  1. Preheat oven to 350, and grease an 11x8” baking dish with baking spray (alternatively, you can use a 9x9 pan or a 13x9 pan**). Set baking dish aside.

Apple Pie Filling
  1. In a medium saucepan over medium-low heat, melt the butter with the brown sugar, granulated sugar, vanilla extract, cinnamon, allspice, cloves, nutmeg, salt, cornstarch and water, whisking occasionally. Once melted, add in the diced apples. 

  2. Allow the mixture to cook for 7-8 minutes, stirring occasionally, or until the apples have softened and the sauce has thickened. Remove from heat and allow to cool to room temperature.

Cake Batter
  1. While the apples are cooling, mix together dry cake mix, sour cream, eggs, vanilla, cinnamon and water. Mix until well combined. 

  2. Spread half of the cake mixture in the bottom of the baking dish (the mixture will be very thick).

  3. Spread the cooled apples evenly over the cake batter.

  4. Lastly, spread the remaining cake batter over the top of the apples (it’s fine if some of the apples aren’t fully covered).

  5. Bake for 22-25 minutes, or until a cake tester comes out clean.

  6. Allow the cake to cool for about 5-10 minutes.

Maple Glaze
  1. Melt butter, maple syrup, and vanilla extract in a saucepan over low heat. Once everything is melted together, remove from the heat.

  2. Add in the powdered sugar and whisk until combined. (If the mixture is lumpy and won’t smooth out, strain the glaze into a bowl with a sieve—it’ll be perfectly smooth!)

  3. Allow the glaze to cool 5-6 minutes in order to thicken. Once thickened, give it a quick whisk before pouring over the coffee cake.

  4. Allow glaze to set before cutting into pieces.

  5. Enjoy!

  6. Store leftovers in the fridge.
