White Chicken Chili
Super Bowl Sunday has always been a chili night at our house. Generally it is a the traditional crock pot or stove top Chili with either ground beef or ground turkey and kidney beans. That has never been a favorite or our son who wants a no bean chili but a tradition that we have kept for years.
This year we did something different - we tossed out the kidney beans and ground beef and went with a White Chicken Chili in the crockpot. This was very easy to make and a nice hearty meal on a cold winter's night, not just Super Bowl Sunday. Topping it with a dollop of sour cream gave it a creamy finish.
Ingredients
2 lb boneless skinless chicken breasts, cut in half lengthwise then sliced crosswise
1 large onion, chopped (about 1 cup)
1 large red bell pepper, chopped (about 1 1/2 cups)
4 medium cloves garlic, finely chopped
1 can (15.25 oz) whole kernel corn, drained
1 can (15 to 16 oz) great northern beans, drained, rinsed
2 jars (8 oz each) green taco sauce
1/2 cup chicken broth
1/2 teaspoon salt
Fresh cilantro, jalapeno slices and sliced green onion if desired
Sour Cream
Directions
Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except cilantro and sour cream.
Cover; cook on Low heat setting 6 to 7 hours.
Stir well and garnish each serving with cilantro. green onion, jalapeno slice and a dollop of sour cream if desired.
